\nAh le rouge. La star des vins. La plus troublante des couleurs. Le seul et unique breuvage pour lequel on parle de Grand Cru. Et pourtant, ce n\u2019est pas le premier \u00e0 avoir \u00e9t\u00e9 cr\u00e9\u00e9 de la main experte de l\u2019homme. En attendant, nous allons vous d\u00e9voiler tous les secrets du vin rouge ardent. <\/p>\n

Il existe des milliers. Des milliers de vins rouges dont la recette d\u00e9pendra de plusieurs facteurs : des donn\u00e9es \u00ab naturelles \u00bb et d\u2019autres humaines. Impossible toutefois de vous d\u00e9voiler toutes les combinaisons possibles, ces derni\u00e8res \u00e9tant infinies.<\/p>\n

Premi\u00e8re distinction : la situation g\u00e9ographie du vignoble qui d\u00e9terminera son climat, son exposition et son type de sol. Chaque r\u00e9gion fran\u00e7aise est (re)connue pour un type de vin. Si la vigne n\u2019est pas difficile et peut pousser partout, les raisins eux le sont. Ainsi, ces fruits fragiles s\u2019\u00e9panouiront davantage dans une zone temp\u00e9r\u00e9e comme dans le bordelais !<\/p>\n

Deuxi\u00e8me caract\u00e9ristique : le type de c\u00e9page qui correspond au(x) type(s) de raisin(s) utilis\u00e9s pour concocter le breuvage. S\u2019il existe plus de 6000 vari\u00e9t\u00e9s dans le monde, certaines raflent toutes les convoitises. Dans la cat\u00e9gorie des rouges, citons le cabernet-sauvignon, le merlot ou le pinot noir mais la liste est longue.<\/p>\n

Autre sp\u00e9cificit\u00e9 : la viticulture. C\u2019est \u00e0 ce moment que la main de l\u2019homme prend le relais sur celle de la nature. Si la m\u00e9t\u00e9o a de grosses responsabilit\u00e9s, la fa\u00e7on dont on entretiendra le vignoble aura \u00e9galement des cons\u00e9quences sur le vin futur.<\/p>\n

Enfin, le type de vin d\u00e9pendra bien-s\u00fbr de sa vinification. Un vin rouge pourra \u00eatre cr\u00e9\u00e9 uniquement \u00e0 partir de raisin de la m\u00eame couleur, contrairement au blanc qui accepte tout type de grappe. <\/p>\n

C\u2019est la fermentation du mo\u00fbt (savoureux m\u00e9lange de jus, peau et p\u00e9pins) durant la mac\u00e9ration, qui donnera au vin sa couleur gr\u00e2ce au contact plus au moins prolong\u00e9 entre la pellicule du raisin et du jus. Ainsi, la couleur de la robe pourra varier d\u2019un romantique rouge clair \u00e0 un myst\u00e9rieux violet sombre. <\/p>\n

Cette \u00e9tape sera \u00e0 l\u2019origine d\u2019une foule d\u2019autres caract\u00e9ristiques comme les ar\u00f4mes, les saveurs, la texture ou la teneur en tanins du vin. Si les rouges ne sont pas tous tr\u00e8s tanniques, tous le seront un peu, ne serait-ce que tr\u00e8s l\u00e9g\u00e8rement, contrairement aux vins blancs. <\/p>\n

Le parcours du combattant ne s\u2019arr\u00eate pas pour le futur cru. Les \u00e9tapes sont encore nombreuses avant sa mise en rayon.
